In-depth studies of habits and consumption
have long-since highlighted the evolution in the behaviour
and dietary habits of Italians: while there is a need to
eat a healthy and balanced diet, there is also an increasing
desire to enjoy good food. On the basis of these orientations,
Monviso, a Piedmont company well known in the low-salt oven-baked
products sector, proposes Panmonviso Biscotto Salute, the
simple healthy product which has become a must on Italian
tables, as good as a biscuit and as light as a rusk. The
Biscotto Salute originates from the tradition of Italian
bread and
biscuit making, alongside products characterised by the biscuit
baking technique (the Italian word for biscuit being “biscotto”,
which literally means “cooked twice”), such as
the Biscotto del Lagaccio for example.
The particular flavour of the Biscotto Salute is still the
result of the traditional process also used to make Panettone,
based on 3 successive kneading phases (mother yeast, refresher,
final kneading), a total leavening time of 6 hours and the
meticulous baking of plain, natural ingredients, such as:
• cereals, rich in carbohydrates and an irreplaceable
source of slowly-assimilated energy
• milk, the basic nutritional food
• sugar, with its high nutritional value, a source
of immediate energy.
The final leavening of the product takes a long time (almost
two and a half hours), unlike the traditional French rusk
which contains lots of yeast, is leavened quickly and kneaded
just once. In this original and unique recipe, Panmonviso
encompasses the best of the typical Italian breakfast: quick,
light, nourishing and capable of supplying energy for hours
without creating a heavy feeling.
